Irish beef stew with dumplings
800g stewing beef, fat removed, diced
1.2 litres beef stock
600g celeriac, peeled and diced
4 carrots, peeled and thickly sliced
3 sprigs of fresh thyme
3 garlic cloves, finely chopped
137g pack Tesco Dumpling Mix
2 tbsp dried parsley
Freshly grouund black pepper
Finely chopped flat-leaf parsley, to garnish
1) Put the beef cubes in a large flameproof casserole dish. Pour over the stock and bring to the boil. Reduce the heat to low and simmer gently for 25-30 minutes.
2) Add the celeriac, carrots, onioons, thyme sprigs and garlic. Cover and cook gently for 30 minutes.
3) Meanwhile, make up the dumpling mix according to the packet instructions. Add the dried parsley and stir well. Divide the dough into 12 equal portions and shape each into a ball.
4) Put the dumplings on top of the casserole and season with black peppr. Cover and cook for 20-25 minutes, or until the meat and veg are tender. Remove the thyme sprigs and divide the stew between 4 bowls. Serve garnished with the chopped parsley.
