Baileys and banana cheesecakes
Ready in about: 20 minutes, plus 3-4 hours chilling time

2 sheets leaf gelatine
2 x 175g pot Mullerlight banana and custard yogurt
1 tbsp sweetener
1 tbsp Baileys Original Irish cream
3 digestive biscuits, crushed
2 bananas, thinly sliced, plus extra to decorate
1 level tsp cocoa powder, to dust
1) Soak the gelatine in cold water for 10-12 minutes, or until softened. Squeeze out the water and put the gelatine in a small bowl.
2) Pour over 100ml hot water and stir well. Pour into a food procssor and add the yogurt, sweetener, Baileys and quark, and whizz until smooth.
3) Divide the crushed biscuits between 4 dessert glasses. Add a layer of banana, putting a few sliced around the sides of each glass. Pour over the yogurt mixture. Cover and chill for 3-4 hours, or until just set.
4) To serve, decorate each cheesecake with 2 slices of banana and dust with 1/4 tsp cocoa powder.
